Without straying from traditional Okinawa soba, our broth is made by simmering pork bones slowly over low heat for eight hours, resting them overnight to draw out the umami, and finishing with ichiban dashi. The result is a gentle soup you will want to drink to the very last drop.

EIBUN mainly uses Hakusan porcelain (Hasami ware).
We also incorporate some pieces from Kitagama in Yomitan and Tsuboya ware.
