STORYOur Journey

How EIBUN Came to Be

In 2012, the founder moved from Iwate Prefecture to Okinawa. While training at a hotel in Yanbaru (northern Okinawa) and at Nakamura Soba in Onna Village, he visited about 500 Okinawa soba shops across the main island and the remote islands. In April 2016, he opened OKINAWA SOBA EIBUN in Tsuboya, Naha.

A New Okinawa Soba Culture Built to Last

In 2022, he opened his second shop, STAND EIBUN, in Tsuboya. The name “STAND” carries the meaning of “to build, to stand up,” and was chosen with the wish for “a new Okinawa soba culture that can continue far into the future.” We keep studying every day so that more and more people will come to know Okinawa soba, the soul food of Okinawa.

A New Vision for Okinawa Soba — EIBUN Tsuboya

In September 2024, EIBUN opened its third location, EIBUN Tsuboya. Building on the themes shared by the first two shops — “Okinawa soba is fun” and “a shop where even a solo visitor feels at ease” — owner Eibun Nakamura collaborated with Okinawan creators on every detail. STUDIO COCHI ARCHITECTS designed the interior, and Miyagi Pottery crafted the original tableware.

Where Tradition and Modernity Coexist — EIBUN palette

In April 2026, EIBUN opened its fourth location, EIBUN palette, on the first floor of Department RYUBO (on the Naha City Hall side). Designed by Taichi Kuma of Kengo Kuma & Associates, the shop features Okinawan red-tile walls blended with plaster floors. The vegan Okinawa soba — available only at EIBUN palette — uses only plant-based ingredients yet delivers profound depth of umami.
